Mustard Soup
Description
A creamy soup with coarse mustard
Ingredients
- 1 onion (chopped)
- 30 g butter
- 30 g flour
- 750 ml broth
- 3 tbsp coarse Groningen mustard
- 100 ml cream
Steps
- Sauté the onion in butter, add flour to make a roux
- Gradually add the broth while stirring until smooth
- Simmer for 10 minutes
- Stir in mustard and cream; do not boil afterward
